Black Bean Brownies

Ok I can see all of you giving me that crazy eye look.  Trust me when I read the recipe I wasn't sold on it either.  I was pretty sure it was a crazy, crazy idea that would never work.  Boy was I wrong!

The first try resulted in an edible brownie but it had an off texture and these odd dry and wet spots.  So I had to do some adjusting and since we weren't doing it for health reasons I tweaked the sugar and chocolate levels. :)

Black Bean Brownies

1 15 oz can of black beans (I recommend Bush's Black Beans.  Bush's has the following statement on their website: All BUSH'S products made after May, 2010 are gluten-free. ) drained and rinsed well
3/4 cup sugar
2 eggs
1/3 cup butter, melted
1/2 cup cocoa 
2 tsp. vanilla
1/4 tsp. salt
1/2 cup chocolate chips (I use milk chocolate chips.  Please ensure they are gluten free)

Preheat oven to 350 degrees.  Grease an 8x8 baking pan and set aside.

In the bowl of a food processor combine all ingredients.  The batter will have a similar consistency to "normal" brownie batter.  This will be much thinner than most gluten free batters.  Bake for 25-30 or until the batter is set.  Cool and cut into squares. 

These are some of the best gluten free brownies we have tried.  They are much cheaper to make than using one of the mixes and use easily found grocery item.  If you make them let me know what you think!
