Black Bean Brownies

Ok I can see all of you giving me that crazy eye look.  Trust me when I read the recipe I wasn't sold on it either.  I was pretty sure it was a crazy, crazy idea that would never work.  Boy was I wrong!

The first try resulted in an edible brownie but it had an off texture and these odd dry and wet spots.  So I had to do some adjusting and since we weren't doing it for health reasons I tweaked the sugar and chocolate levels. :)

Black Bean Brownies

1 15 oz can of black beans (I recommend Bush's Black Beans.  Bush's has the following statement on their website: All BUSH'S products made after May, 2010 are gluten-free. ) drained and rinsed well
3/4 cup sugar
2 eggs
1/3 cup butter, melted
1/2 cup cocoa 
2 tsp. vanilla
1/4 tsp. salt
1/2 cup chocolate chips (I use milk chocolate chips.  Please ensure they are gluten free)

Preheat oven to 350 degrees.  Grease an 8x8 baking pan and set aside.

In the bowl of a food processor combine all ingredients.  The batter will have a similar consistency to "normal" brownie batter.  This will be much thinner than most gluten free batters.  Bake for 25-30 or until the batter is set.  Cool and cut into squares. 

These are some of the best gluten free brownies we have tried.  They are much cheaper to make than using one of the mixes and use easily found grocery item.  If you make them let me know what you think!

I'm Still Alive

I haven't abandoned you I promise.  I had my gall bladder removed last week.  I'm healing slowly but I'm healing.  I have some great posts lined up for you though!  Two recipes and a knock off bag.  I promise you they'll be worth the wait. :)

2012 Off To a Start.........

I'm feverishly working to finish two projects.  My paper project for Iron Craft and one for the next Pinterest Challenge.  I hope to have both finished by next weekend.  That way I can use the following weekend to prep meals for after my upcoming surgery.  :(

I found out on January 3 that I get to have my gall bladder removed on January 20th.  It's a fairly simple procedure and the biggest worry after will be hernias.  Which means absolutely no lifting, pushing, or pulling for 3 weeks.  That's going to kill me!  It will give me lots of time to craft and blog though.

I'm in search for some great gluten free freezer meals.  If I'm going to leave the hubs in charge of dinner then I need them to be as easy as possible for those first few days while I recoup.  Does anyone have any ideas?
